What is an organic substitute for gelatin when making candy?

I’m just making it for my kids, not selling it, but i pride myself in feeding them at least 98% organic.

I can’t taste any difference either, but she says she can taste a difference. Organic sugar to me tastes the same just a larger granuale, and it’s not processed as much. Is there a difference?
